Couscous Salad

This recipe is one of the most popular recipes we make at Crumbs Kids. You will be surprised at the light, pasta texture of couscous. You can serve this recipe warm or cold and it’s a great way to introduce veggies and new textures to kids.

This recipe is to be made under adult supervision.

Ingredients:
  • Couscous – Large pearl / tri-color
  • Butternut squash
  • Olive Oil
  • Water
  • Sea salt
  • Fresh parsley (optional)
  • Lemon (optional)
  • Honey (optional)
Preheat oven to 350 degrees
Slice one butternut squash in half lengthwise & lightly coat with olive oil
Place squash face down on a baking sheet and bake for 30 Minutes
to Prepare couscous Boil 2  cups water
when water comes to a boil stir in 1 1/2 cups of cous cous, remove from heat and cover with lid- let stand for 8-10 minutes.
Check cous cous – it should be fluffy not soggy.
Add a 1 Tsp of honey and 1/2 Tsp of lemon juice (optional)
Top couscous with cubed baked squash and add salt to taste
Add fresh grated Parmesan cheese and a dash of parsley
