Chicken “Nuggs”

I know, I know chicken nuggets again ? Get ready to try a healthy spin on chicken nuggets. These nuggets are baked not fried, and have a light crunchy texture that kids love.

When preparing these nuggets make sure to wash your hands, cooking surfaces, and cooking tools after handling egg and chicken.

These nuggets rule !

3  boneless chicken breasts

1/3 cup unbleached flour

1  tablespoon of ground flax

2  eggs lightly beaten

1 1/2 cups panko bread crumbs

1/2  teaspoon of cumin (optional)

1/2  teaspoon salt

2 tablespoons olive oil

Pre heat oven to 375 degrees  (adults only)
Rinse chicken under cold water and pat dry with paper towels. Cut the chicken into 1/2 inch cubes and refrigerate   (adults only)
In a bowl mix flour, flax and add a pinch of salt and combine with a wisk
In a separate bowl lightly beat eggs
Lightly coat the chicken in the egg mixture, then roll chicken the flour mixture
COAT chicken CUBES with panko bread crumbs
BRUSH OR drizzle a small amount of olive oil on top of chicken cubes
place NUGGets on baking sheet with parchment paper
bake for 20 – 25 minutes UNTIL LIGHTLY BROWN / remove from oven and let cool
You can also use a toaster oven. aDJUST SETTINGS ACCORDINGLY
